Cut all vegetables in medium pieces. Dice the onion. Saute the onions and carrots until the onion is lightly golden.
In a big baking pan add all vegetables, salt and black pepper. Add 1-2 cups of hot water.
Salt the chicken and place it on the top of the vegetables. Cover with aluminium foil and put in preheat to 385F oven.
Bake until vegetables and chicken are almost done. In a small bowl mix 2-3 tbsp of the liquid part of the meal and add 1 tbsp red pepper. Add it on top of the chicken and bake another 10-15min.
Serve this Baked Vegetables with Chicken Thighs warm with glass of wine
This is a great snack option if you want something salty and healthy. So much better for your body than chips.
In this recipe I used baby carrots, but regular carrots should work as well. Cut the baby carrots in half and if they are too thick – cut the half again.
In a mixing bowl put all carrot slices and drizzle with olive oil. Add salt and black pepper. Add seasoning of your choice – in this case I used Italian seasoning. But you can add pepper flakes, rosemary, sage, etc.
Mix them well and place in a baking sheet. Preheat oven to 425F. Bake for 20min or until lightly golden.
Enjoy your meal alone, or as a side dish to steak or fish.
